The weather is getting chillier, and the nights are getting longer. Are you looking for a new way to enjoy nice autumn veg which is filling, healthy and tasty?
Here’s a smashing pumpkin recipe we found and have been really enjoying around Life’s Nutrients HQ. Give it a go and let us know what you think!
Curried Baked Pumpkin
First, you’ll need to make a Spice Mix like so!
• 1 Tbsp Mustard Seeds
• 2 tsp Cumin Seeds
• 2 tsp Coriander Seeds
• 1 tsp Black Peppercorns
Make your spice mix by toasting the mustard seeds, cumin and coriander seeds and peppercorns until fragrant. Cool, then grind to a powder. Store in airtight jar.
Now, for the pumpkin preparations!
• 1 Large Tbsp Spice Mix prepared as above
• ½ tsp Salt
• 1 Knob Fresh Ginger, peeled and grated
• 1 Knob Fresh Turmeric, grated
• 2 Cloves Fresh Garlic, chopped
• 2 Red Chillies, chopped
• 1 Orange, zest and juice
• 1 Pumpkin, other winter squashes can be used as a substitute
To a mortar add 1 large Tbsp of the spice mix you’ve made, the salt, grated ginger and turmeric, chopped garlic and chopped red chillies. Grind mixture into a smooth paste and transfer to a bowl. Mix in the orange zest and juice.
Slather paste over roughly chopped pieces of pumpkin (or squash) and roast in a hot oven until tender.
If you don't happen to have the fresh ingredients to hand, no problemo! Use dried spices instead and you'll still get great results.
